Pita-Bread Pizzas Recipe
INGREDIENTS:
2 whole-wheat pita rounds, split horizontally into halves
4 teaspoons olive oil, divided
3 shallots, finely chopped (1/4 cup)
8 ounces broccoli florets, cut into 1-inch pieces (3 cups), or 1 package (10
ounces) frozen broccoli florets, thawed
1/4 teaspoon salt
1/4 teaspoon red pepper flakes
2 cloves garlic, minced
1/4 cup water
4 ounces crumbled goat cheese or shredded mozzarella cheese
8 large sun-dried tomatoes, finely chopped
12 fresh whole basil leaves
4 teaspoons freshly grated Parmesan cheese

DIRECTIONS: PREPARATION TIME: 20 minutes; COOKING TIME: 20 minutes
1. Heat broiler, setting oven rack 6 inches from heat. Arrange pita rounds, cut sides up, on a baking sheet and toast under broiler 1 to 2 Minutes, until lightly golden.

2. Heat oven to 450°F. Heat 2 teaspoons oil in a 10-inch nonstick skillet over medium heat. Add shallots and sauté, stirring, 1 minute. Add broccoli, salt, red pepper flakes, and garlic; cook, stirring, 1 minute. Add water to skillet, cover, and steam broccoli 3 minutes, until just tender. Uncover skillet and, if necessary, continue to boil until any remaining liquid has
evaporated.

3. Spread 1/4 of the broccoli mixture in an even layer on top of each pita round, then top with goat cheese and sun-dried tomatoes. Arrange basil
leaves over top and sprinkle with Parmesan cheese. Drizzle with remaining 2 teaspoons oil. Arrange pizzas on a baking sheet and bake 10 to 12 minutes, until cheese melts and topping is hot.
